A good ole stand by pasta

  • 3 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon basil (optional)
  • 2 cups flour


  1. Pour flour in a pile on counter.
  2. Take fingers and hollow out about a 6″ well.
  3. Crack eggs into well and add salt and 1 tablespoon of oil.
  4. Beat egg mixture, then incorporate the edges of the flour wall in a circular motion.
  5. When egg mixture turns into a thick paste get your hands in their and start mixing everything up.
  6. Knead the flour ball for about 8 minutes.
  7. Coat flour ball with the other 1 tablespoon of oil, wrap in plastic wrap and let sit for about 45 min.
