Ingredients

  • 1/2 cup butter
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter
  • 3 cups old fashioned oatmeal

Instructions

  1. In a 2 quart saucepan, combine butter, cocoa powder, milk, sugar, and salt. Stirring constantly, bring to a rolling boil. Continue boiling for 1 minute.
  2. Remove from heat and stir in vanilla extract and peanut butter until smooth. Fold in oatmeal to coat.
  3. Drop by tablespoons (or use a medium cookie scoop) onto parchment paper (or wax paper) lined trays. Let cookies set up, 30-60 minutes, before storing an in airtight container.
